If you have the customer preview of the new Visio, you can select a connector and go to the Home tab and use the shape styles to pick the design for the connector. As a possible addition though I think it needs to be easier to change the design of the connector, perhaps a drop down menu with 4 or so frequently used styles: like dashed.
