It's easy to get lost. Heading styles can help you find your way all the way through your document.
I've asked around--and apparently a lot of things can remove styles. One possibility is a keyboard shortcut that you're typing not knowing that it's been assigned to clear styles. (The default keyboard shortcut is Ctrl + Spacebar.) It could also be a macro that is assigned to run when you save the document.

That sounds frustrating! I'll ask around, but in the meantime I recommend also checking on answers.microsoft.com.
