It can feel a little bit like lions and tigers and bears--do you want a page number in a lower corner, or do you want a page number and the document title? Do you want to add the author name or the file path? Do you want different headers and footers in different sections?Oh my is right!This is where a little planning in advance can save you time on the long road.The trick is to decide what you want first, and then it will be easier to get what you want. In Word, page numbers and headers and footers look like the same thing, but they aren't. You can quickly add a header and footer from the gallery that already has a page number. That works. Or you can add just a page number from the gallery. That works, too. But if you want add a different header or footer, such as your name and the title of your document, and then you add a page number later, the page number might overwrite your previous header and footer. It might not be pretty.If you want other information in the header or footer, and you don't see a match in the Header gallery or the Footer gallery, click one of the Blank options, or click Edit Header or Edit Footer. You can add information by typing it in, or you can add fields, such as Title or Author or FileName, by clicking the Insert tab, clicking Quick Parts, and then clicking Field. Section breaks can help with this. Insert a section break between your second and third page. Be sure to unlink them. Then, in the first section, select the Different First Page on the Design tab under Header and Footer Tools (you have to click in a header or footer to see the tab) and place your page number on the second page where you want it.
Because you've unlinked the sections, you can then put the rest of your page numbers in a different location. Important tip: You need to unlink both the header and the footer; unlinking one doesn't unlink the other.
In the 2003 version of Word you could insert in the footer page number/total number of pages in the document.

Did you insert the page number by using the Page field (Insert tab, Text group, Quick Parts command, Field command)? That should work, unless you've got a section break that is setting the numbering back to 1.
Insert a section break between page 2 and page 3. Be sure to unlink the sections, and then select your page number on page 3, click the Page Numbers command, click Format Page Numbers, and then type 1 in the Start at box.

If you want to use custom information (such as title and page number) and you don't see what you want in a gallery entry, you need to click Edit Header or Edit Footer and enter the information by using the Title field or typing the title and using the Pages field. I need to use an old company header from previous Word document but cannot copy and paste it. I would like to keep it in a gallery but an uncertain how to do this.

Double-click in the header to open it. Then select the header (except for the paragraph mark at the end), then click Header (on the Insert tab) and click Save Selection to Header Gallery.
