There were some questions in the comments in the last few days about working with the Ribbon minimized (which I do a lot, but not exclusively). In a nice piece of chance timing, Jensen wrote a short piece (UI blog) on how the Ribbon has been improved in this area post-beta. Please check it out:

Not relating to the current topic, but important for me.
I have downloaded the beta, but am afraid to install. I don’t know whether the files created in Office 2007 (read M S Excel 2007) will function properly in Office 2003 (presently used), if at some stage I had to go back to Office 2003. Whether there are any known dangers except the new functions added in Office 2007 ?

Kanwaljit, if you avoid using features in Excel 2007 that aren't supported in Excel 2003, you should be ok. Just remember to save any workbook created in Excel 2007 as an .xls file if you plan to open the file in Excel 2003. There are also stability issues related to using charts and shape objects in Excel 2007 that you should be aware of.
I would add, Kanwaljit, that it is not a good idea to save XLS (Excel 2003) files with charts from beta 2. It can garble your charts and will bloat XLS files with charts by a factor of 20. For worksheet-only files, it seems A-OK, however.
In general, files created in the beta should open in the beta refresh, and those created in the beta refresh should open in the released copy of Office 2007. XLS files should work in previous versions. I would back up anything important, though, before using the beta, because it is beta software. The beta site will have more information on this subject.

Here is the Road Map for the Ribbon
a) Minimise the Ribbon (make it a menu)- 2007 Beta referesh
b) Make the QAT Multi Line -2007 Release (hopefully) -under the pretex of making features more "discoverable"
c) Add lots of QAT's and make them float - 2008
d) Bring Back the Toolbars and Menu Bars as
a "new feature" with customising options (just by right clicking instead of writing a complex code !!)- in 2015 after every one has forgotten that this was available in first place

Something else to think about is which version of Excel you want to use as a default if you have two or more versions installed. Here's an example showing how to make the change if you still want 2003 as your default even though Excel 12 has been installed:

Just the right amount of cynicism! I think customisation will be back before 2015 though.
I guess how soon after 2007 ships we'll get our customisation back will depend on sales.
